Manzanilla la Piconera
Tasting Notes
This wine undergoes biological aging under the flor using the solera and criaderas system with an average
age of 5 years.
COLOUR: Pale with golden highlights and greenish edge.
NOSE: Fruity notes typical of biological aging. Bakery and white flower aromas with a
mineral limestone character.
PALATE: Powerful and flavoursome. Very dry with pleasant acidity. Saline and maritime
character. Long persistence with a rounded, enveloping finish.

Fino
Tasting Notes
A wine from the Palomino Fino variety with exclusive biological aging averaging 6 years.
Fino pairs well with seafood, especially prawns, king prawns and oysters, as well as nuts and Iberian ham.
COLOUR: Pale straw yellow, very clean and crystalline.
NOSE: Pronounced biological aging with active yeast aromas, nutty notes (almond). White
flower notes such as jasmine are present, along with fresh saline and iodine notes.
PALATE: Very saline on the palate, with pleasant acidity; flavoursome, enveloping and fresh.
On the retronasal we detect wood and toasted bread aromas. The finish is very dry with a slight bitterness
that enhances the tasting experience.

Oloroso
Tasting Notes
The classic Jerez wine, traditionally aged oxidatively.
COLOUR: Deep chestnut with greenish tones.
NOSE: Rich and spiced entrance (vanilla, black pepper). Citrusy notes and noble woods. Cooked
fruit compote aromas.
PALATE: Dry with marked but pleasant acidity and freshness. Slight astringency. Very spiced
and long persistent finish.

Amontillado
Tasting Notes
A wine with 7 years of biological aging and 8 years of oxidative aging.
COLOUR: Old gold with amber nuances.
NOSE: Extremely dry. Dried fruit (almond, walnut), sesame. Hints of biological aging. Dry
tobacco leaves and toasted (roasted almond) smoky notes. Mineral aromas (slate and granite).
PALATE: Saline. Very dry retronasal with slightly bitter finish. Great body and structure.

Palo Cortado
Tasting Notes
A wine with a light biological aging of around one year, followed by 10 years of oxidative aging.
COLOUR: Old gold with brown tones. Medium intensity.
NOSE: Sweet and citrus entry. Dried fruit such as hazelnut and walnut. Candied fruits like
plums and apricots. Spiced notes of clove and nutmeg. Toasted aromas.

Cream
Tasting Notes
This Cream wine, with an average age of 15 years, is made from a blend of Oloroso and sweet wines.
COLOUR: Mahogany with old-gold highlights; clean and crystalline in appearance.
NOSE: In the glass there are citrus notes of lime and dried fruits such as prunes, suggesting
ripe sweetness. On swirling, aromas of toasted coffee, fruit compote and balsamic hints of juniper and pine
emerge, together with spices like liquorice and rosemary, creating an aromatic symphony.
PALATE: The entry is harmonious and predominantly sweet, with balanced acidity and sweetness.
A roasted, toasted wood aftertaste is noticeable, while the finish reveals toasted nuts, dried fruit and
bitter orange peel, leaving a persistent and complex trail.

Moscatel

COLOUR: This single-varietal Moscatel wine shows a chestnut colour with amber reflections
and a clean, crystalline appearance.
NOSE: In the glass there are clear citrus notes of sweet orange and tangerine, accompanied
by sweet aromas of fruit compote and quince evoking ripe sweetness. On swirling, fresh and lively aromas of
prune, candied fruit, dates and honey emerge, together with warm spicy touches of clove and sandalwood and
oak wood.
PALATE: On the palate the entry is warm, with balanced acidity and sweetness that provide
freshness and a liqueur-like texture. The finish reveals liqueur-chocolate and citrus notes with very subtle
and pleasant astringency. It is very persistent with a well-structured body, leaving a long-lasting memory.

Pedro Ximenez
Tasting Notes
Wine from Pedro Ximénez grapes, aged in American oak casks with an average age of 5 years.
Ideal to enjoy on its own or paired with blue cheeses or sweet desserts such as tocino de cielo or sponge
cake.
COLOUR: A very intense, clean dark mahogany colour.
NOSE: Typical Pedro Ximénez aromas of raisins, honey, dates and prunes. Also toasted notes
such as caramel, coffee, biscuit and candied nuts. Notes of tobacco leaf are present.
PALATE: On the palate it has a very pleasant liqueur-like entry; its freshness and acidity make
the sweetness very balanced, resulting in an easy, well-rounded mouthfeel. A slightly bitter finish gives it
persistence and complexity.
